PHILADELPHIA, PA  – Bolo, Chef Fuentes’ Latin American dining room & rum bar, has debuted a Roast Lechon Dinner to its freshly minted Sunday night service.  Available weekly from 4 pm - 9 pm, the dinner is an extravagant culinary experience featuring a whole roasted pig served with traditional and seasonal accouterments.


The Roast Lechon Dinner is a three-day process beginning when the pig arrives at Bolo. Chef Fuentes and his team place the pig in a sour orange brine for 24 hours before deboning and rubbing it with achiote, oregano, and other spices. After sitting overnight, the pig is roasted on Sunday morning in preparation for dinner service.

In addition to the Lechon Dinner, Chef Fuentes spends Saturday afternoon walking through nearby Rittenhouse Square markets, searching for a mixture of traditional and inspired seasonal produce to pair with the weekly meal. The assortment of traditional and seasonal accouterments have in the past included black cherry mojo, yuca mash, chickpeas in red sofrito, market verandas in escabeche, arroz con gandules, Swiss chard callaloo, roasted heirloom corn in coconut beurre monté, and other various vegetables and side dishes from the Bolo menu.

The Roast Lechon Dinner is priced at $55 per person. At the same time, Bolo’s ever-evolving dinner menu is also available during Sunday night service. The selection features piscolabis (snacks), pinchos (skewered meats and vegetables), cuchifritos (fried foods), verduras (vegetables), platillos (main dishes), posters (desserts), as well as a Paladares Menu priced at $85 per person which encompasses Fuentes’ personalized selection of the current menu presented in a tasting menu format experience for guest (available nightly).
